Sausage Kale Soup

This is such a fabulous and filling recipe for those cold days or any time you just crave a good soup.  So easy to make and very yummy.

  • 1 lb sausage browned and drained
  • 4 cups kale washed and chopped
  • 4-5 each potatoes diced (to about 4 cups)
  • 1 can cannellini beans
  • 1 medium onion diced
  • 2 32 oz carton chicken broth
  • 1/2 tsp cayenne pepper
  • 1 tsp black pepper
  • 1 tsp salt
  • 2 Tbsp Italian seasoning
  • 1/2 cup half and half or milk as substitute


  1. Add onion and sausage to skillet.  Cook sausage in skillet until browned and cooked through

  2. In a large separate pot, bring chicken broth to a boil.  Add diced potatoes.  

  3. When potatoes are cooked through, add sausage, kale, beans and seasonings.

  4. Bring to a boil and reduce heat to simmer for about 10 mins.  Add 1/2 cup of half and half (or substitute milk).  

  5. Serve and enjoy!

This recipe also freezes well and can be saved as a meal for another day.
