This is a great side dish!  Butternut squash and sweet potato are simmered together in a perfect pairing that fills food cravings and gives you a side dish that is full of vitamins, minerals and fiber.

I was first introduced to this recipe by my mother-in-law (shout out: Hi Mom!)  She was raving about it and decided to serve it during our family’s Easter dinner.  She was right!  It is very tasty.  When you give this gal a sweet potato, my tendency is to bake it or microwave it.  If you give me a squash, I’ll toss it in the oven.  This was a nice variation which puts the two veggies together in a perfect pairing but you can cook it in the stovetop.  Butternut squash meets his long time friend sweet potato…and then we eat them all up!  It is a side dish recipe that people can’t stop eating.

So here’s how it’s made:

First, working with a winter squash is always tricky work.  They are not easy to peel, but once you get started using a good knife, you’ll find it’s a labor of love well worth the effort.  Next, peel and dice the sweet potato and onion.  The next steps go really quickly and pretty soon you’re ready serve.  Melt butter and coconut oil in a large saucepan over medium heat.  Add the onion and sauté for a couple of minutes.  Next add the squash, sweet potato and seasonings.  Mix to combine.  Add the broth and allow to come to a simmer.  Continue to simmer over medium heat until squash and sweet potato are tender (18-20 minutes).  Now you’re ready to serve this dish with any main course you’ve decided to complement it with.  Enjoy this easy side dish recipe!

A side dish that is not only meant for those colder fall months.  This side perfectly compliments any main course meal and is a quick dish to prepare and full of nutritional value.

Course: Side Dish
Ingredients
  • 2 1 /2 cup butternut squash diced and peeled
  • 2 1/2 cup sweet potato diced and peeled
  • 1 small onion diced
  • 1 cup chicken broth
  • 1 Tbsp butter
  • 1 Tbsp coconut oil
  • 1 tsp thyme dried or fresh
  • 1 tsp oregano dried or fresh
  • salt to taste
Instructions
  1. Peel and dice the squash, sweet potato and onion.  

  2. Melt butter and coconut oil in a large saucepan over medium heat. Add the onion and sauté for a couple of minutes. 

  3. Next add the squash, sweet potato and seasonings. Mix to combine. Add the broth and allow to come to a simmer. 

  4. Continue to simmer over medium heat until squash and sweet potato are tender (18-20 minutes).

  5. Serve and enjoy!
