Easy Oven Baked Chicken and Vegetables

With one or two sheet pans, 5 or 6 key ingredients from the fridge, 40 minutes of baking time, you’ll soon have a hearty and healthy meal on the table for any night of the week.  Easy Oven Baked Chicken and Vegetables is a go-to for those days when you just need to throw it all together and need an easy cleanup.

This kind of meal usually happens on days that I haven’t really thought out exactly what we were having for dinner.  I know that I want to offer a vegetable, or two and some protein….so grab the chicken and empty out the veggie drawer.  You’ll be amazed at how simple this meal is and how fast clean up goes when you’re all done.

How it’s made:

Oven baked chicken and vegetables

Just grab a sheet pan or two (depending on how much you need to cook) and line them with parchment paper.  This keeps food from sticking and makes washing the pans super easy.  Preheat your oven to 400 degrees C.  Slice chicken breasts in half lengthwise to make them a thinner cut of meat. I like to coat both sides with olive oil, pepper, salt and Italian seasoning.  Next, cut sweet potatoes into fries, coat in olive oil, salt and pepper.  Slice one zucchini, coat in olive oil, salt and pepper.  Wash brussels sprouts, slice off the ends and cut in half, coat in olive oil, salt and pepper.  You can use the same bowls to get all of this done.  Easy Peasy!  Layer everything on the sheet pan/s.  Make sure you don’t layer the vegetables, try to keep them at one layer on the pan so that they cook more evenly.  Now you’re going to put it in the oven and bake at degrees for  15 minutes.  After 15 minutes, turn the chicken and vegetables and roast for another 15 minutes.  Make sure your chicken is cooked through and vegetables are done to your liking.

I hope you enjoy this fast meal idea.  It’s inspired by the many other single sheet meal ideas that are out there, but I really like that you can grab, chop, mix in oil and seasonings, bake and be done!  So simple.

A very easy weeknight meal that requires little prep and is very healthy.

Ingredients
  • 4-6 Chicken breast halved
  • 1 zucchini sliced
  • 2 cups brussels sprouts washed, halved
  • 1 large sweet potato cut into fries
  • 1 Tbs salt
  • 1 Tbs Italian seasoning
  • pepper to taste
  • 4 Tbs olive oil
Instructions
  1. Preheat oven to 400 degrees C

  2. Line 1 or 2 baking sheets with parchment paper.

  3. Slice chicken breast to make thinner cuts.  Coat with olive oil, salt and pepper.

  4. Slice zucchini.  Coat with olive oil, salt and pepper.

  5. Cut ends of brussels sprouts. Coat with olive oil, salt and pepper.

  6. Peel and cut sweet potato into fries.  Coat with olive oil, salt and pepper.

  7. Layer all ingredients on sheet pans.  Bake for 15 minutes at 400 degrees.  After 15 minutes, turn chicken and vegetables.  Return to oven and bake for additional 15 minutes.  Remove from oven and check chicken (165 degrees) and vegetables for desired doneness.
