Crock-Pot Orange Marmalade Meatballs

I have a sweet tooth and when I can find a recipe that caters to this side of my craving, then I’m a very happy girl.  Of course it’s even better when it’s a yummy warm appetizer that can serve as a meal all by itself.  Meatball subs anyone? There are a lot of meatball recipes out there (and other jelly meatballs too) and I find myself going back to this one all the time.  Of course I like it because it’s a super easy appetizer recipe, but I also like it because of the unique flavor.

When I’m getting ready for a party or gathering of friends, you won’t often find me laboring in the kitchen when my guests arrive.  I want to really enjoy my company to the fullest, so most of the foods and dishes that I prepare can be made or prepped the day before or earlier in the day.  This way my hands and mind are free to enjoy conversation, visiting and eating rather than working away in the kitchen.  Oh, and of course, clean up is a snap.  🙂  I used frozen meatballs for this appetizer, but you can also use your own favorite meatball recipe in their place.  I usually double the recipe if we have a group larger than 8 or fewer accompanying appetizers to go with it.

Ingredients:

32 oz. frozen meatballs (or your favorite meatball recipe)

1 cup orange juice

1/4 cup beef broth

1 12 oz. jar orange marmalade

1 Tbs. Worcestershire sauce

2 Tbs. diced jalapeño pepper

2 Tbs. diced green onion

1 Tbs. salt

How they’re made:

Mix the orange marmalade, orange juice, beef broth, Worcestershire sauce, jalapeño pepper, green onion and salt in the Crock-Pot.  Add meatballs and coat thoroughly with marmalade mixture.  Turn the Crock-Pot to the “high” setting and let them do their thing for 2-3 hours or until the meatballs are cooked through.

Note:

There is no need to defrost the meatballs if you are using the frozen variety.  Also, it can be VERY hard not to take a peak or maybe sneak a taste…or two…or three, but try not to open the lid too often.
