This is so tasty, very healthy and easy to make.  The best part about it is you have very minimal cleanup afterward with this One Pan Chicken and Vegetables recipe.  The lemon and honey flavor is fantastic in this quick-to-make-meal.

One pan meals are very popular these days.  Who doesn’t like the convenience of a one pan cleanup and easy ingredients that are quick to prepare?  This gal loves it!  Lots.  The day has been crazy!  Too much to do!  And now there’s dinner too?  With this recipe you can get it done really fast and still make a meal that impresses.  Have company coming over?  Just add your favorite wine and a little garnish to make it look extra special (because the simple flavor already is special)

How to make One Pan Chicken and Vegetables:

First thing you’ll want to do is melt that butter in your favorite sauté pan.  Add the seasonings and garlic and let them simmer for about a minute.  While that’s happening, salt and pepper both sides of your chicken.

Add the chicken to the pan and allow it to cook for about 5-7 minutes on each side.

While the chicken is cooking I usually get the lemon-honey sauce ready.  It’s so easy to make.  Just mix the lemon juice, honey and soy sauce in a small bowl and set it aside for a minute.

Make room for your vegetables in the pan and add them right in with your chicken.  Sprinkle with a little more salt and pepper if you prefer. Now add your lemon honey sauce.

Cover your pan and let everything cook for another 8 minutes or until chicken is cooked through and vegetables are tender.  I like to serve this meal with a little side of rice.

A wonderful combination of lemon, butter, chicken, asparagus and carrots.  So quick to make and such great flavor.  All will enjoy and cleanup is a breeze.

Ingredients
  • 4-6 Chicken breasts sliced or pound to 1/2 inch thickness (or chicken thighs)
  • 3 Tbsp butter divide
  • 1 Tbsp minced garlic
  • 2 tsp Italian seasoning (or mix of dried basil, oregano, and thyme
  • salt and pepper to taste
Lemon Herb Sauce
  • 1/4 cup lemon juice
  • 1 Tbsp honey
  • 1/2 Tbsp soy sauce
Vegetables
  • 1/2 lb asparagus washed, with end snapped
  • 1/2 lb carrots
Instructions
  1. Melt butter in your favorite sauté pan over medium heat.  Add garlic, Italian seasoning and salt and pepper.  Sauté for about one minute.  Add your chicken to the pan and cook for about 5-7 minutes then turn chicken and cook the other side for another 5-7 minutes.  At this time chicken should be mostly, but not all the way cooked through.

  2. Make a little room in the pan by scooting chicken to one side.  Add asparagus and carrots to the pan with the chicken.  Add a little more salt and pepper to the vegetables if desired

  3. In a small bowl, mix lemon juice, honey and soy sauce.  Pour over chicken and vegetables and cover pan.  Cook for about 5-7 minutes or until chicken is cooked through and vegetables are tender.

  4. Serve with fresh garnish or lemon wedges if desired.
